Even better, you could in addition provide a simple style file already defining a few macros and semantic commands for your particular class so that students find the LaTeX syntax more natural and helps them type their formulas more easily.

Why TeX and not LaTeX? Did your students got any introductory courses on how to use LaTeX before? Perhaps the early learning curve is to high for them to try to figure out by themselves.

Just a quick note before going to sleep: it works! If I use \newcommand{\myto}{\DOTSB\to} then \myto will produce the correct alignment! Thanks, tomorrow I'll try and check what the other options do.

Thanks, I already knew about these, but I'm actually trying to define a macro that will add \dots between some some relations/operators which are provided by the user. So I, as a package write, don't know in advance which of the semantic commands should be used. However, as the example in the question shows, amsmath somehow knows!

I think the title is fine. I'd rather have questions about high level topics (e.g prefix notation or s-expressions), rather than low level details (which may or may not be the answer to the question). People will probably search by topics.

I also like TeXShop because you can have side by side source and pdf output, also with two-way synchronization between them (Cmd+Click on a piece of code and you're taken to its place on the output). The only things I miss are tabs to organize many open files and better project management.

The thing I don't like about LyX (or WYSIWYG-ish in general) is that it puts an emphasis format (that's all you see!) rather than content structure (which is hidden behind the format). LaTeX code does it the other way around, the structure is explicit and this helps you focus on the content rather than the format of your document.

Can't provide any useful answer other than just make good use of the standard LaTeX packages already out there to produce your own layout. I think for example multicol allows you to switch between single/double column environments, longtable (or something like that) allows you to create tables that span many pages, etc.
