Sounds good! This is pretty much what I already do. So is there any reason one should want to use \[ instead of equation*? Or is it better just to forget about \[ altogether?

Amy, to try to isolate your problem, could you try to compile this code with xelatex from the command line and see if it works for you? This way you can find if the problem is with LyX or your compile engines.
