Yes, the packages use fontspec and the original OpenType fonts when using LuaLaTeX or XeLaTeX, or converted Type1 fonts when using pdfLaTeX. I keep them reasonably up to date, so if your TeX distribution is up to date, so should the fonts. Also see the documentation for more information.

Your MWE results for me in Source Sans Pro with italics as emphasis (when I used the font names with spaces). You can try the packages (\usepackage{sourcecodepro,sourceserifpro} \usepackage[default]{sourcesanspro}). It is also possible to use bold for \emph (see What is the canonical way to redefine the \emph command).

@Rasoul: there is a difference between Ubuntu packages (from the Ubuntu repository) and CTAN packages (from CTAN). The latter is what you want. The Ubuntu texlive-publishers package can't be installed because you are running vanilla TeX Live. But as texlive-publishers is actually a collection of CTAN packages you can install those (if they haven't been installed already). @Rasoul: most CTAN packages included in texlive-publishers (list) are installed with texlive. Missing CTAN packages can be installed trough the TeX Live Manager.

I'd like to add that this is a mathematical capital upsilon. The regular capital upsilon looks exactly like the capital Y (which is why the mathematical capital upsilon is written this way). People familiar with the Greek alphabet (but unfamiliar with this mathematical variant) would probably try to find it in a different alphabet.

@NilsL I completely agree that choosing a good typeface is more than just taste. However, when one has to choose between several good fonts (and I would qualify Bembo Book and Garamond Premier Pro as such) it does come down to taste. Just like in dressing: once one has selected a socially acceptable outfit (eg: jeans and a t-shirt) one can decide the details based on taste (the color/print of/on the shirt). This doesn't mean I dismiss any of the ideas contained in your answer (it's a great), but the question stated the choice was limited between the Bembo and AGPP.

@Ahmad: \typeout simply displays a message while running the file. As for the \ifx line: this either includes all files or just one file depending on the value of \files. If you want to be able to change the included files you should leave it there.
