I think it's fair to say that we are living in a transitional period where typography is still very much linked to paper and printing and, in my opinion, the end of the transition cannot arrive too quickly. This is why I make a clear distinction, as articulated by Caramdir, between the typsetting system (in this context, *TeX) and the different ways of rendering the output of that system. This does not contradict what anyone else is saying, but it helps perhaps explain my original commment.

I must echo Caramdir's question. It's usually the print driver which handles that, assuming that you are doing this for printing, and even if you don't want to print, you can always "print to file".

What I needed was Will's assurance that the two commands were functionally interchangeable. I grant you that I could have tried to download an old version of the fontspec source and compared, but the whole point of sites like this is that whereas this would take a considerable amount of time on my part, it's immediately answerable by the author of the software.

I second this suggestion. On Mac OS X, Skim + Aquamacs play nicely together and with synctex. I use it all the time.

"What are the combinations of fonts you're trying to use?" I wasn't trying to control this, other than with the default. In other words, there was no further font commands than those in the minimal document above. In case anyone else is interested, I've since found a compatible (and appealing) font with the Euler maths font: TeXGyre Pagella.

I had opportunity to use detex recently and it leaves many TeX-related words which have nothing to do with the content. I would almost go as far as saying that compiling to PDF and then using pdftotext might produce a more accurate count, even when it contains page numbers and repeats the headers.
