First off, you need to update your pgfplots to 1.12 or add \pgfplotsset{compat=1.12} in the preamble. And also hyperref too for that matter to, say, 6.83m and TikZ v3.00. Many bugs have been patched in these version regarding these interactions. Also do you use PdfLaTeX for compilation?

@Adelyn No problem. But what is above is basically this sentence: If the matrix entry is empty, sum it's row and column numbers and check if it is 7 and either do this or that. So no black magic is involved.

You can't do it within pgfplots \addplot command because then everything is already set. What you can do is to start your new command by scanning your columns for the unique values and setting xticklabels based on that.

Where is the figure? If you add grid=both (which is short for your <x,y>majorgrids to any axis it should be visible. Something might be overriding the options. Or add zmajorgrids if this is a top view of a 3D plot.
