+1! "... specify the font for each feature ..." came as such an unpleasant surprise that I actually checked it out (with XeLaTeX), and can confirm that the results are different. Surprising, too is that all the fonts are embedded in the pdf, even though some of them are not used (in the single-sizefeatures case). Hmm.

Thank you. It's an ingenious option, but unfortunately doesn't fulfil my original aim, only hinted at in the question: uncluttered source code.

Thank you for trying. draw=white is a bit intrusive if 'something gets in the way'. And, I could, as you say, add join to every node, but as joins are in the majority, I'd like to find a way to 'reverse the default', to minimise the amount of options, mainly for readability and mantainability.

comment Turkish (İ) character inside code listings
As an alternative approach to using fontenc and inputenc, you may want to consider using a 'more modern' approch, with xelatex or lualatex, which process Unicode files directly, in place of pdflatex. (That's assuming you don't already have a big investment in legacy files.)
