Thanks for pointing me in the right direction. After a lot of digging around, I managed to create an output that I was satisfied with. However, it really feels like the manual for BibDesk needs a thorough overhaul by someone who isn't a nerdy programmer :)

@crf Strange, it worked when I tried to compile it now. So thumbs up! (That it doesn't work when I apply it to my actual document is another matter. I really hate LaTeX sometimes :P)

@cfr Sorry, it was I who was a bit confused about what this answer did. I would like to be able to turn this function on and of globally and not by having to go and edit each instance of the enumerate environment at the local level. I've updated my question now. Werner's answer is almost there.

Sorry for being unclear. What I mean is that with this solution, I can't have other enumerate enumerate environment nested within the myenum environment which don't disappear.

This doesn't seem to work if I nest other enumerate environments inside of this one.
