Don't know if this will really help you, but what if you (everytime you stop editing and want to compile) delete all the .aux files, and then run twice or three times pdflatex?

Sorry if I wasn't too much clear. Everything goes just as if the mathpazo package isn't loaded at all (no errors, good pdf generated, but with the same default fonts used by moderncv).
