comment why are math fonts (traditionally) italic/slant? and Greek non-italic?
I would not use \text for this in MathJax. That gives the wrong semantics, for one thing. It would be easier to use \mathrm{...} around the whole equation rather than having to wrap each symbol individually. That could even be done in a pre-filter for the TeX input jax. But this is the wrong forum for that discussion.

It is not just for those two, but also things like "the monomial ax", and in general makes it visually apparent for any mathematics so that it is easier to scan the sentence. As for numbers, these are already distinct from the letters, so there is no need to italicize them, and vectors being bold distinguishes them.

comment Why does \text only affect next charater, but \cal affects all that follow
At this point it is probably too late, as there is substantial content with $$, and from the standpoint of ease of typing, I suspect most users on the SE sites that offer MathJax would prefer $$ to the longer \begin{...} forms. These are mainly people trying to get some math into their posts, not TeX purists as I would expect is more the case here. In any case, I have nothing to do with making the decisions at SE.

MathJax does accept \[...\], but StackExchange has disabled it because of bad interactions with Markdown.

MathJax does support the cases environment.

You do not need the \[ and \] for MathJax to recognize this. You have not give your MathJax configuration, but as long as processEnvironments is true in the tex2jax section of your configuration, then it should pick up the \begin directly.

comment MathJax vertical space + too thick fraction lines
Ps, you can use \\[dimen] to add extra space between lines of an alignment. So \\[5pt] would add an extra 5 points of space between the lines at that breakpoint.

comment How to avoid a continuous fraction line going through the equals sign in MathJaX?
There is a work-around in MathJax v2.1 for this issue. This is out in beta now, and there should be an official release within the next week I would expect.

See my response here for details of why this happens in MathJax.

comment How to perform an action once Mathjax loaded completely?
Push your action onto the MathJax.Hub command queue. See mathjax.org/docs/2.0/queues.html#the-mathjax-processing-queue
