If you've set all your documents to utf8 they will work with é in your documents (hello from a Swiss guy working on Linux and Mac). There's really no need to have \'e in your documents anymore...

Have you checked the first part of tex.stackexchange.com/a/62295/828 regarding the "two ordinate" problem? And; it's very hard to help you with the current state of the question. You should try to boil your example down to a minimal working example.
