I want to use this template for a personal statement (template here).

I don't want to include any addresses or dates etc. I just want the heading name|title and then be able to write in the main body. When I comment on these or leave them blank it causes an error when compiling the document. I also want the body of the text to be justified - is this possible?

My editor is Texmaker.

You can redefine \makelettertitle so the recipient information won't produce errors when missing:

\documentclass[11pt,a4paper,sans]{moderncv}

\moderncvstyle{banking}
\moderncvcolor{red}
\usepackage[utf8]{inputenc}
\usepackage[scale=0.75]{geometry}

\name{John}{Doe}
\title{Resumé title}

\renewcommand*{\makelettertitle}{%
  \recomputeletterlengths%
  \maketitle%
  \par%
  \hspace{0pt}\par\vspace{-\baselineskip}\vspace{-\parskip}}

\begin{document}

\makelettertitle
