When using the moderncv document class, the standard metadata title of the PDF is <author name> -- <text of \title{}>. However, I'm not using the \title{} entry, so the metadata title becomes an odd <author name> --.

How can I change this metadata title? The solution in How can I generate PDF metadata from LaTeX? is not possible, since hyperref clashes with moderncv.

I've also tried to include \phantom{} within the \title{}, but this too creates an error.

You can just use command

\hypersetup{pdftitle={Testtitle}} % <====================================

after \begin{document}.

Change Testtitle to what you need ...

\moderncvstyle{classic} % casual, classic, banking, oldstyle and fancy

% personal data
\title{Resumé title}
\address{street and number}{postcode city}{country}
\email{[email protected]}
\extrainfo{additional information}
\quote{Some quote}

\hypersetup{pdftitle={Testtitle}} % <====================================
