I use LaTeX mostly for writing math papers and lecture notes of various kinds, though I love using it via jsmath/MathJax inside the Sage notebook or with SageTeX.

Lately, I've been convincing students to start using LaTeX for whatever they want to. Surprisingly (to me), they almost immediately switch over wholesale!
